This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.
Notes
Total Boil time = 60 minutes Start boil adding liquid + dry extracts + candi sugar + 1 oz. Williamette hops. Add pureed cherries to boil at 40 minutes into boil. Aerate wort 10-minutes after cooling, prior to adding Yeast to fermentor. Transfer to secondary fermentor 7-12 days after start of fermentation noted allowing sediment to settle in initial fermenetator. After allowing ferment in secondary for 10-14 days, transfer to bottling bucket, adding 4 oz. Cherry flavoring to bucket. Bottle using 1 carbonation drop per bottle.. Allow to age in bottle for minimum 3-weeks.

Good cherry taste

Final beer had a good cherry taste that tends to linger. Would probably add higher amount of "Tart cherries" in next batch, but taste still good. Allowed to age in bottle longer than originally planned due to hot weather. Would probably recommend letting beer age in a more controlled temperature area such as a basement area.
