Using late DME method. Add 3lbs DME at start of boil. Add remaining 3lb in last 20 min. Keeps color nice and light. Add zest from 1 lemon in last 15 min of boil. Add 1/2 tsp irish moss in last 15 min. Great summer beer!

Smells wonderfull! This time added 1 tsp coriander in last 15 min. Fermentation took off like crazy within 8 hrs! Will update in a week or so. This is a rager! Recomend blow off tube if using glass carboy. Blew the top right off my plastic primary!
Transfer

Transfered to secondary on 2-27-08. Color a little darker than last time but sample tasted absolutely wonderfull! This is definately going to be a keeper! May up the coriander next time though. I'll keep you posted.
Bottled 3-19-08

Bottled on Wednesday. Aroma was nice with just a hint of the lemon. Sampled and tasted very good once again with a nice hint of lemon. Balanced nicely as the lemon added a nice bitterness but not too much. Will let you know about the final product in three weeks or so but so far for such a simple brew it seems to be coming along nicely. Oh by the way added kcsuperkleer in secondary two days before bottling for clarity.

Very good for such a simple recipe. Light and crisp with just the right touch of hops. The lemon and corriander do not come through as much as hoped, but still a nice drinkable summer beer. Probably the last all exctract I will ever do. Overall impression, Very Pleased!

In what form is the coriander that you used? Whole seed? Ground coriander powder? Thank you, Brian

I used whole seeds crushed in a coffe grinder. If I were to brew this again I would use .75oz of both the peel and spice.
