Danstar Nottingham
The Nottingham strain was selected for its highly flocculant & relatively full attenuation properties. It produces low concentrations of fruity and estery aromas and has been described as neutral for ale yeast, allowing the full natural flavor of malt & hops to develop. The recommended fermentation temperature range of this strain is 14° to 21°C (57° to 70°F) with good tolerance to low fermentation temperatures (12°C/54°F) that allow this strain to be used in lager-style beer. With a relatively high alcohol tolerance, Nottingham is a great choice for creation of higher-alcohol specialty beers!
Notes
2 packs Notthingham Dry Hop with 1 oz Amarillo in secondary mimi mash 3# of grains at 152 for 1 hr in 3.5 qt water. Rinse with the same amt of water at 170. Use 1# rice hulls in the mash to prevent a stuck mash Ferment at 68 for 2 weeks secondary for 1 week and cold condition at 36 for another week. Use a fermenter with plenty of head space or be ready to clean up a mess.

pretty good with some age

It took a few months to mellow enough to enjoy. A bit on the strong side with alcohol flavor. Not as smooth in that aspect as I was hoping. Maybe use some liquid yeast instead of dry next time. The hop balance was pretty good.
