Helluva Heavy Honey (...but I still love'er)
Old Ale • Extract • 4.5 gal
I originally intended to brew an American Brown Ale. After the boil I diluted to 4 gallons. Much to my surprise, the hydrometer read 1.02. So...I boiled an extra 1.5 lbs. of honey in a little water for 15 minutes and added that to the wort hoping to achieve a gravity near 1.05. Well, I was a little off, the original gravity ended up being 1.082. I either misread the first gravity measurment or I added way too much honey. The brew is currently in the primary, joyfully becoming the next great adult beverage. I'll provide a full write-up/review when it is complete.

Brief Review

I drank the first beer a couple weeks after bottling. It left a lot to be desired. It had an overwhelming alcohol taste that hit you immediately and got worse through the finish. It has now been over six months since I bottled so I drank another one last night. Much to my surprise the beer now has a pleasant flavor. There is a subtle sweet flavor (not what I'd describe as malty) and a relatively smooth finish. I don't detect a hop flavor or aroma. It is still quite heavy but definitely enjoyable if you like heavy, dark ales. You wouldn't want to kill a six-pack in a single evening, but one or two with a steak dinner would be great.
