Designed this based on Ray Daniels' "Designing Great Beers." Great book, loaded with good info. Plan to dry hop this as well with 1 oz. Goldings in secondary. Will be brewing 1/12/08. Planning on a week in Primary, 2 in Secondary.

Ingredients (Extract5 gal)

  • 3 lbs American Caramel 20°L

    American Caramel 20°L

    Provides color, body, and contributes to foam retention and beer stability.

  • 1 lbs Toasted Pale Malt

    Toasted Pale Malt

    Imparts nutty flavor and aroma. Use in IPAs and Scottish ales.

  • 7 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • .5 lbs Barley Flaked

    Barley Flaked

    Helps head retention, imparts creamy smoothness. For porters and stouts.

  • 2 oz Cascade - 5.5 AA% pellets; boiled 75 min

    Spicy with citrus notes. Slightly grapefruity.

  • 2 oz East Kent Goldings - 5.0 AA% pellets; boiled 45 min

    Mild, slightly flowery.

  • 1 oz Cascade - 5.5 AA% whole; boiled 15 min
