Ingredients (Extract, 5.25 gal)

Body and Richness. Distictive Nutty flavor and or sweet, smooth caramel flavor and a red to deep red color. For porters, old ales.

American Chocolate Malt
American Chocolate Malt
Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

American Black Patent
American Black Patent
Provides color and sharp flavor in stouts and porters.

American 2-row
American 2-row
Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

Low concentrations of fruity and estery aromas. Neutral for Ale yeast, allowing for malty profile.
Notes
Steep crystal, choc., black malts in 1.5 qt. H2O 30 min @ 150d, sparge w/ 0.5 gal H2O @ 170d. Mash in 2-row & wheat in 1.5 qt. @ 168d. Hold @ 150-154d 60 min., mash out 168d 30 min., sparge 0.5 gal. @ 170d. Primary 7 days, secondary 14 days. Prime w/ 3/4 cup corn sugar & bottle condition 2-3 weeks. Refrigerate 1 or 2 weeks and enjoy! 60 minute boil. Irish moss at 15 min remianing to boil. OG 1.056, TG 1.104, Est ABV 5.5%.

Good brew!

Sampled a few today after conditioning in the frig for two weeks. Mighty tasty...smooth with an initial mild sweet crystal/malty flavor and mild lingering bitterness. Overall, I'd say this batch turned out well. Prost!
Oh Ya.. The Moose is Back!

The Moose is back in the frig! Sampled another one today (ok...two) and if I did'nt have to work tommorow, I'd sample several more. This has become my house brown ale. I would recommend that you give it a try! PS - I still can't get my wife to give it a fair try... she's a miller lite fan, but I persist. Prost!
The Moose has mellowed.

Sampled a few today and this batch is primo! Nice crystal clear dark brown with ruby red highlights. Good dense head of foam. Fairly mellow bitterness, but has a nice spicey flavor and very subtle twang - almost sour, but not quite. A very tasty and easy drinking brown ale that goes down way to fast.
A Sad Day

Just finished the last of the batch and am wishing I had more. There's always next brew season. Overall, this is a good and somewhat complex beer.
