P&J Bitter
Special/Best/Premium Bitter • Partial Mash • 10 gal
This is an excellent session beer with great classic english bitter biscuit flavor(even tough I added in the victory which didn't make it an entirely english bitter) The aroma is excellent as well. You may have problems finding east kent goldings now since the "hop crisis" is upon us all. If you can't find east kent you can use Challenger or all Crystal Hops and get about the same results. I've done it both ways. Just increase the amt of crystal bittering to 3 oz and you should be fine.

Danstar Windsor
Danstar Windsor
Windsor ale yeast is a true English strain that produces a beer which is estery to both palate and nose with a slight fresh yeasty flavor. Beers created with Windsor are usually described as full-bodied, fruity English ales. Brewers choose Windsor to produce beers that range from pale ale to porter with moderate alcohol levels and the flavor & aroma characteristics of the best traditional ales. Depending on the composition of the recipe, Windsor demonstrates moderate attenuation which will leave a relatively high gravity (density). Recommended fermentation temperature range for Windsor is 17° to 21°C (64° to 70°F).
Notes
use 2 11g packets of windsor yeast 1 week primary 2 weeks secondary. mashed grains at 154/hr using 1.25 qt water per # of grain. Sparged with 170 water (same amt as initial mash)
