An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. Wyeast 1056 American Ale™
Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.
Notes
Mash at 152 for 1 hour. Boil 75 minutes. Ferment at 67. I ended up adding .25 oz. of Magnum hops to the mash just for kicks. Also, the final addition of Cascade was done with a Hopback.

Began around 10:30AM and pitched yeast at 5PM into 72 degree wort. By the next morning it was fermenting heavily. OG = 1.062 #32

Kegged this batch on 12/15/07. It turned out just great. Has a very strong malty backbone with some rich bready flavors and a bit of a grainy note as well. The hops come through nicely although they are not overwhelming or highly pronounced. Just a really nice balance of malt and hops that finishes clean and dry with a fair amount of bitterness. Very happy with the way this turned out. One note I would make on this is that now that I've brewed a few batches with Maris Otter as the base grain I'm starting to suspect that I personally prefer the taste of American 2-row instead. I think that 2-row has a bit more of a clean profile that finishes more dry and smooth and without as much "grainy" flavor. I'll be testing this theory soon because the batch that I brewed following this one has the same grain bill except for replacing the Maris Otter with 2-row.

Seems more than 44 IBU, but then again I just woke up and this is the first think I have had to drink. Similar initial malt taste as the 19 but I can taste an apparent nutty character to it at the first sip. Kind of a herbal/earthy hop nose to it, but it looks like all you have in it is Cascade and Centennial so once again I have proven I am hop dumb but I digress. Seems more crisp and clean than the 19 but without as much mouthfeel and body to it. Clean bitter finish with a hint of grassy-ness. Bitterness is very apparent IMO. Also have some citrus finish in there too but I didn't taste that until I burped (yup, burped again and there it is, wierd). Now off to a 19 and possibly TF2 Cheers

Just wanted to make a note that I let this keg sit for a while while I drank other beers and I have recently come back to it. I was pleased to find that the grainy flavor has almost totally disappeared and it is much cleaner now. The hops come out a little more than before and I find this to be a really solid pale ale. Very easy drinking, although the bitterness is probably a little too high for the style. I think it fits this batch though because my gravity also came in a little high.
