This was my attempt of brewing a beer that my wife might drink. That and I like a ginger ale that has a strong ginger flavor not a weak one.

Ingredients (Extract20 L)

  • .3 kg Dextrine Malt

    Dextrine Malt

    In light-colored beers to give additional body. Adds richness without color.

  • 3 kg Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 1 kg Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 30 g Cascade - 5.5 AA% pellets; boiled 30 min

  • Danstar Nottingham

    Danstar Nottingham

    The Nottingham strain was selected for its highly flocculant & relatively full attenuation properties. It produces low concentrations of fruity and estery aromas and has been described as neutral for ale yeast, allowing the full natural flavor of malt & hops to develop. The recommended fermentation temperature range of this strain is 14° to 21°C (57° to 70°F) with good tolerance to low fermentation temperatures (12°C/54°F) that allow this strain to be used in lager-style beer. With a relatively high alcohol tolerance, Nottingham is a great choice for creation of higher-alcohol specialty beers!

Notes

Used a base Cream ale recipe from my brew shop for this one. I omitted 15 g. of cascade hops that where for the aroma addition. I grated around 2 cups worth of ginger,zested and juiced 5 lemons that I added at the last 10 minutes of the boil. At the bottling point the ale has a nice ginger flavor and great color.

Good but next time more ginger

The color a flavor of this one is wonderful. The next time I brew this one I am going to up the ginger and add Orange zest along with the lemon that I added.
