This beer turned out very good. Both dry yeast produced a clean flavor w/ just the right amount of smoke.

Wyeast 1056 American Ale™
Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.
Notes
Using S-04 & Nottingham dry yeast. Also cleaning out 2 55 gal empty malt extract barrels, which should probably yield 6 lbs of extract. Will rinse them w/ hot wort and add to boil. Results are in: Very tasty w/ the Nottingham being more crisp.
