Typical of British and Canadian ale fermentation profile with good flocculating and malty flavor characteristics, crisp finish, clean, fairly dry.
Notes
Do a stovetop mini-mash of the grains for 45 minutes at 152°F to get the most out of the Victory. I use two 3.5 lb cans of the new JOHN BULL MARIS OTTER PALE EXTRACT -- One at the beginning and one as a late addition with 20 minutes left in the boil. This helps reduce the caramelization and will give space to the natural maltiness of the Maris Otter.

Racked this evening with a SG 1.015 -- Nice and clear -- medium amber. Strong sediment bed from that highly flocculant 1335 Wyeast. Smells woody and a bit toffee like.
Bottled -- tastes clean and bright

This bitter came out clear as a bell after using Whirlfloc for the first time, and using Wyeast 1335 British Ale II yeast. Has a warm alcohol background in its youth and a nice clean bitterness -- not as malty a signature as I had thought the John Bull Maris Otter extract would give it. Will leave it in the bottle for 2 to 3 weeks before the first taste. FG: 1.014 (est)
Tastes like Fullers London Pride!

Rich and malty with a long but tempered hop finish. Excellent brew. Sparkling clear (First time I used Whirlfloc --I'll never go back!) Really reminds me of Fullers. Will brew again!
Intense flavor and snappy bitter finish

This one keeps getting better. The strong malty signature is like a burnt caramel up front -- not harsh or stout-like, but more in the aroma. The hops is becoming a cleaner, sharper flavor on the finish as these babies age. Only 10 left!

I almost didn't want to open it, but the last George Harrison went down like a Liverpudlian dream...This was a VERY good ESB -- the best I have made. Tastes very much like a Fuller's London Pride, but with a slightly richer caramel present at first. A distinct maltiness lingers, but is perfectly balanced with the woody hops after the swallow. Yummy. MUST brew again.
