Ingredients (Extract5 gal)

  • 1.0 lbs CaraMalt; Beeston

    CaraMalt; Beeston

    Often used to give color and flavor to pale lagers.

  • 1.0 lbs Crystal Malt 120°L

    Crystal Malt 120°L

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • 0.5 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 0.5 lbs English Brown Malt

    English Brown Malt

    Imparts a dry, biscuit flavor. Used in nut brown ales, porters and some Belgian ales.

  • .25 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 9.9 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 2.75 oz Cluster - 7.0 AA% pellets; boiled 60 min

    Used for bittering and flavor qualities in light and dark American lagers. Aroma is very floral.

  • 1.0 oz Northern Brewer - 8.0 AA% pellets; boiled 2 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 1.0 oz Centennial - 10.0 AA% pellets; boiled 2 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

Steep crushed grains in 150 degree water for 30 minutes. Sparge with 170 degree water. Proceed as normal. Ferment below 70 degrees. **Pitch double the yeast or a large starter. Substiute Carastan for the Caramalt. Age no longer than 1 month.
