Belgian Dark Strong Ale • Extract • 5 gal

Adding a little holiday spice to a Belgium Dark. Hopfully not so much as to get in the way of the beer. This will be my 6th beer and first attempt at a Belgium as well as a Holiday beer. Will bottle condition till the holidays. Brewing tommorw-will post outcome.

Ingredients (Extract5 gal)

  • .25 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .5 lbs American Victory

    American Victory

    Provides a deep golden to brown color. Use in nut brown ales, IPAs and Scottish ales.

  • .125 lbs Belgian Chocolate Malt

    Adds a nutty flavor, Brown Ales

  • .25 lbs Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

    Caramel, full flavor, copper color. For Belgian ales, German smoked and bocks.

  • 10.00 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 2 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 1 lbs Candi Sugar Dark

    Candi Sugar Dark

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1.5 oz Hallertau - 4.5 AA% pellets; boiled 60 min

    Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

  • .5 oz Spalt Spalter - 4.8 AA% pellets; boiled 15 min

Racked and Waiting

Brewed Aug 1 and she went to town right away. Racked to secondary on Aug 9 the day before we went on vacation ... was bubbling every 9-10 sec. ... tasted great ... still sweet, but she has a long way to go. Got back 10 days later and was still at 9-10 sec. Another week and activity slowed practically to a stop but. Been in secondary about 19 days so far, but i plan on leaving in the secondary for another few weeks then bottle condition till Dec.
