  • 1.00 oz Perle - 7.5 AA% whole; boiled 60 min

  • .50 oz Perle - 7.5 AA% whole; boiled 20 min

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

Add raspberries & ginger to secondary prior to transfer of beer; steep raspberries in 2 cups of water @ 155 deg.F for 20-minutes prior to transferring to secondary; add 2 tablespoons of honey to steeping raspberries; ferment in secondary for at least 2-weeks prior to bottling; age in bottles for minimum of 14-days.

Entered this beer in the Topsfield Fair competition Summer 2007 and won in the "Fruit Beer Category". Great taste.....great Summer-Early Fall beer. Raspberry flavor comes thru, and than the hint of the fresh ginger grabs you at the end.

Mine didn't turn out so good...

Brewed this back in December, following the recipe to a T. The raspberries kicked up a pretty good fermentation in the secondary and really dried out this beer. I've had it mellowing in bottles for 6 weeks but it's still REALLY tart. Might have to dump. What did I do wrong?
