Just brewed today ... came out darker than expected ... had trouble bringing wort to a boil and maitaining a boil ... don't know if this was part of the problem ... will post outcome

Ingredients (Extract5 gal)

  • .5 lbs Dextrine Malt

    Dextrine Malt

    In light-colored beers to give additional body. Adds richness without color.

  • 7.00 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 1 lbs Rice Syrup

    Rice Syrup

    Used like other rice adjuncts in American and Japenes lagers to provide a dry, clean taste and light body. Adds gravity without changing body or flavor substantially. Use in place of corn sugar in small quantities.

  • .5 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1 oz Mt. Hood - 4.2 AA% pellets; boiled 60 min

    Mt. Hood

    Used mainly for aroma and flavor in American and German style ales and lagers. Aroma is mild, pleasant, light, and clean.

  • White Labs WLP001 California Ale

    White Labs WLP001 California Ale

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

- Steep Grain 60 min - Add Malt Extract & bring to boil - Add Rice Syrup - Add Hops - Add Honey at 50 min - Add .75oz chopped Cilantro at 55 min - Finish boil and sparge & rack to primary fermenter for 7-10 days - Rack to Secondary adding 8-10 sliced Jalepenos - Condition another 1-2 weeks and bottle - Maybe add a serrano pepper to a few bottles for those who like the extra kick!

I may have missed something

First, I would like to say that I am intrigued by the use of Jalepenos in the secondary. With that said, your brewing intructions say to steep grains for 60 minutes; however, your ingredients does not list any grains. Was this an oversight? Thanks, Hawk

Jalepenos & Grain

by adding the jalepenos to the secondary i am hoping to retain some of the sweetness and flavor of the peppers and not just the heat ... it seems from what i have read and heard that boiling the jalepenos in the wort provides only the heat and not as much of the aroma and flavor of the pepper ... of course i am a new brewer ... this being only my 5th brew to date ... as far as grain, i thought (as jawbox) that dextrine malt was considered a grain ... but again, i am a newbie ... thanks for your thoughts

Racked to Secondary

Racked the Blonde (that actually turned out darker than a Blonde) and added the peppers in a hop bag. Tasted it before the peppers were added, and it was great! I took a sample to the local brew store (still new at this and looking for feedback) and they loved it ... asked me to bring back a bottle when it's done. Tempted not to add the peppers, but I did. Decided to add 6 small, but hot, jalepenos (rough chopped) from my garden and 3 roasted "inferno" hatch chiles. Also added a small handfull of fresh chopped cilantro. Brought the peppers, chiles and cilantro to a boil in a few cups of water, then cooled and added to the secondary, water and all. That was 5 hours ago ... just tasted a sample ... it has some nice heat, but not too much ... and a slight green taste, probably from the cilantro ... will taste again tomorrow ... thinking I might move it off the peppers to another fermenter when I feel the heat is right.

Still waiting for results ...

Sampled after 24hs of peppers in secondary ... heat was right so I racked to third fermenter ... bottled eight days later ... still had a bit of a vegetative flavor ... heat was good ... sampled at 7 days and there was no carbonation ... vegetative flavor had subsided ... but the overall flavor was not as wonderfull as before the peppers ... will brew this again without the peppers, but hope over time this batch will mature ... good experiment either way ...
