Produces classic British bitters, rich complex flavor profile, clean, light malt character, low fruitiness, low esters, well-balanced.
Notes
Steep grains in a gallon of water at 152F for 45 minutes, Sparge with another gallon of 170F water, one pint at a time. Bring to boil with the dry extract and raise volume to 2.5 gallons. DO A LATE ADDITION of the liquid at around 40 minutes. Follow hops schedule, and don't forget an extra 1 oz. of Fuggles at flame out, too.

Wort has a rich, caramel aroma

Brewed yesterday (7/1/07). Pitched at 73F into exactly 5 gallons with an OG=1.057. Bubbling furiously at 14 hours.
Bottled -- tastes promising

Put the Barefoot Woman into the bottle today -- Tastes significantly more bitter than I expected but seems to have good balbance at this stage. Color is a nice, deep-gold -- like clover honey. Stay tuned!
