HEY! HO! Let's GO! Use any German ale yeast. This is a Partial mash @ 152°F for 1 hour. Comes out paler than predicted - Suggest using a late addition of the liquid extract (at about 20 minutes out...)

Me and the boyz pumped this one out ten days ago -- SG= 1.051. Racked it today at 1.019 -- I couldn't get my hands on a good German yeast, so I pitched dry. She'll rock ok... Oi!

Bottled 50 12-ouncers tonight with an FG=1.015. Brilliantly clear medium to light tawny-amber. Has a maltier taste than I expected at this point, and the hops note is very subdued. There is a finish of lightly roasted grains. We'll let him sit for 2 weeks and report back. Oi!

Tasted this guy today. Very nice! Has a rich complex taste, a spicy, almost sharp aroma that comes out more as it warms up, and a very nice bittersweet finish. It is maltier than I expected, but in a good way -- many flavors in the sip but the balance with the hops is nice. Clear as a bell in the bottle, but develops some chill haze. Orange-twany tan in the galss with a tight, cream-style head and good sharp carbonation. Somewhat like a British Special Bitter, but with that spicy overtone of the Spalt hops (I guess that's what I'm getting) Should get quite good over the next couple weeks. HEY! HO!
