Scotland is famous for its malty, strong ales. This yeast can reproduce complex, flavorful Scottish style ales. This yeast can be an everyday strain, similar to WLP001. Hop character is not muted with this strain, as it is with WLP002.
Notes
An Adaptation of the "Poor Richard's Ale" recipe... Single-step mash of the grains at 154°F for an hour. Sparge to bring volume of liquor to 2 gallons. At beginning of boil at the first hops. Add the liquid extract after 30 minutes. Add the molasses in the last 10-15 minutes. Add Irish moss at 15 minutes out.

Bottled old Ben today

Into the bottle after 10 days in the primary and 10 days in the Secondary. Very clear, tawny amber-orange. First taste is quite strong on alcohol, but it actually smooths out nicely -- I think this has real promise (and I am surprised -- Did't think any ale with such a high percentage of adjuncts would appeal to me...We'll see!)

She's a beauty! VERY rich and malty with an amazing, sweet aroma of caramel -- very grainy -- like the smell of the grain bag steeping. Good alcohol/malt balance with subdued woody hops. I think this needs a few more weeks for perfection. VERY SURPRISED this old recipe with 19% adjuncts turned out so well and so close to the style guidelines.
Getting even better with age! Rich yet balanced.

This beauty is getting fuller and rounder with age -- has a wonderful sweet aroma, but is drier and clearner on the palate. Good hops balance, and a lingering warmth on the finish. Great beer! Ben was on the right track!
The Last Bottle -- MUST brew again!

Split the last bottle of ol' Ben with Brent last night. What a beauty! Crystal clear, dark amber with red highlights -- sort of like Buckwheat honey in color. A thin head of tight tan bubbles laces the class with each swash. Aroma is deep, sweet caramel -- you can smell the molassas overtones as it warms up. Yet when you drink it is surprisingly balanced -- not sweet, but rich and malty, curbed by just the right bitter tang. Each gulp gets better. This has aged soooooo nicely -- Must brew again!
