Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

A wine yeast strain that is less attenuative than WLP715, leaving some residual sweetness. Slightly fruity and will tolerate alcohol concentrations up to 15%. A good choice for sweet mead and cider, as well as Blush wines, Gewärztraminer, Sauternes, Riesl
Notes
Used Lalvin 71B yeast, not WLP720. Honey was white clover. Method: steeped malt in 1qt water. Removed grains and added extract. Boiled for ~30 mins. Added 1pt cold water and cooled. Stirred in honey. Poured over berries in a plastic bucket. Rehydrated and pitched yeast. Bucket covered with cheesecloth. Stirring several times daily until berries disintegrate, then will transfer to a glass jug and airlock. Will add ~1lb strawberries and 1/2 vanilla bean to secondary.

I added 1g of FermaidK nutrient on the second day. Today (3 days after pitching) I transferred to a glass jug and airlocked. SG = 1.028 Color is a light brownish pink, opaque with yeast and strawberry bits. Tastes a little like a strawberry milkshake, only one made with really old berries. I'll let the fermentation complete, then move to secondary with more berries and vanilla.

Moved to secondary this week with an extra pint of strawberries, 1/2 oz french oak cubes and 1/2 vanilla bean, split. Clearing nicely to a deep pink color. Will taste weekly for flavor.

Status check today: SG = 1.011. Tastes pretty good. Lots of strawberry flavor with a hint of vanilla. Deep clear pink/magenta color. Stuck it in the frige to drop the yeast out as best as I can since I like the vanilla where it is. Will rack in the next couple of days to a clean jug and let sit for another week or two before bottling.

Turns out I decided to bottle instead of racking. The vanilla and oak flavors have come out a lot in the last few days of frige time. Tastes good. Yield was 7 12oz bottles.

This one came out mostly like a strawberry wine. The malt and honey haven't presented at all so far, though the oak and vanilla are nice compliments. Overall it's pretty good and a nice way to have your fruit.
