White Labs WLP005 British Ale
This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.
Notes
"One never knows, do one?" Pitched the yeast at 71°F. Got a quick start, but had to rouse it with a closed-fermenter-swirl every 2nd day for a week -- I had heard this was a good idea with this particular strain. Smooth, even fermentation ensued with ambient temperatures in the 65-67°F range. Racked to secondary (glass carboy) after 7 days. Still bubbling slowly. Bottling after 11 days in 2ndry using only 1/2 cup of corn sugar, as ESBs are lightly carbonated. Actual OG=1.055, FG=1.017.

I checked the FG in the secondary today -- Encounter a few residual fizzies and a brew that is darker than predicted, but lighter than expected incolor. SUPERB taste! Wow! Great woody hops up front. NICE!

Well -- After 3 weeks in the bottle I just opened one of these beauties. Excellent! The carbonation has come up nicely. Pours with a thick, creamy beige head of tight bubbles that subsides in a few minutes, leaving a narrow cap on top. Deep amber -- with a hint of red-brown in color -- some chill haze but not a problem. Aroma hops signature is low -- in line with ESBs. Nice light notes of caramel and buttered toast that give way to a side-of-mouth woody bitterness and a slight hint of cedar on the finish. GREAT MOUTHFEEL -- body is just thick enough to hold your attention and leave you wanting another. Great success! Man -- this is a wonderful beer.

Brent and I had a couple while boiling a dark Mild ale today. This beauty continues to impress me. The bitterness is stronger than the IBU calculation would imply. There is a nice crisp edge to a slightly fruity initial aroma. It resembles a Whitbread, but not as fruity. Yummy! Give it a try. I may enter it in the Nats....

On April 7 had the father-in-law, two bros-in-law, and a soon-to-be-nephew do a tasting in comparison to Whitbread -- All liked it, and all but one like it better than the Whitbread...

This one keeps getting better -- Big Frank from OTCTS says it's delish.... Great caramel notes up front, long splendidly rich finish, yet refreshing. MUST BREW AGAIN!
