Ingredients (All Grain5 gal)

  • 12 lbs American 6-row Pale

    American 6-row Pale

    Tends to increase lautering efficiency due to a stiffer husk. May be used as the base malt for any beer style. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts.

  • 12 lbs English 2-row Pale

    English 2-row Pale

    All English Ales. Workhorse of British Brewing. Infusion Mash.

  • 1 lbs Lyle's Golden Syrup

    Lyle's Golden Syrup

    Increases alcohol without flavor. Liquid invert sugar.

  • 1 lbs Candi Sugar Clear

    Candi Sugar Clear

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 5 lbs White Table Sugar (Sucrose)

    White Table Sugar (Sucrose)

    Common household table/baking sugar. Lightens flavor and body of beer. Can contribute a cider-like flavor to the beer if not cold-fermented or used in large quantities.

  • 1 oz Hallertauer Tradition - 6.0 AA% whole; boiled 60 min

  • 4 oz Tettnanger - 4.5 AA% whole; boiled 50 min

    Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

  • 1 oz Hallertauer Mittelfrüher - 4.5 AA% whole; boiled 20 min

    Fine, 'Noble'.

  • 1 oz Pride of Ringwood - 8.5 AA% whole; boiled 15 min

    Moderate.

  • 1 oz East Kent Goldings - 5.0 AA% whole; boiled 5 min

    Mild, slightly flowery.

  • 1 oz Cluster - 7.0 AA% whole; boiled 2 min

    Used for bittering and flavor qualities in light and dark American lagers. Aroma is very floral.

  • 3 oz Cascade - 5.5 AA% pellets; added dry to primary fermenter

    Spicy with citrus notes. Slightly grapefruity.

  • 3 oz Brambling Cross - 6.0 AA% pellets; added dry to secondary fermenter

    Grandparent of Saxon and Viking, they have a unique toasty, buttery, slighly resiny aroma with some woody notes.

    White Labs WLP099 Super High Gravity Ale

    Can ferment up to 25% alcohol. From England.WLP099 Super High Gravity Yeast, Available Nov.-Dec.

Notes

if i actually do this batch, i plan on using a blend of the whitelabs superhigh gravity yeast, the wyeast rogue pacman, and a lot of yeast nutrient/energizer and of course, i will go through the insane, pain in the arse process of adding hops every minute of the 2 hour boil

watch Cohumulone levels in IPA styles

some of your hops are high in Cohumulone levels. These will produce unwanted lingering harshness. Cluster and Cascade, though great hops, have lots of Cohumulone (around 38%). Shoot for the lower levels for awesome IPAs. Simcoe is an example of the low cohumulone (20%), yet high in Alpha acids. Challenger is another good example (23% Cohumulone, yet 7-10 �).

sorry i took so long to get back to ya on it, i still haven't brewed this one, will attempt soon (after changing according to your advice of course) thanks again brewbros
