Ingredients (Extract6 gal)

  • 1 lbs Crystal Malt 10°L

    Crystal Malt 10°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales. Characteristics & Applications: • In contract to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

Notes

Step mash grains: 110F > rest 30 minutes; 120F > rest 30 minutes; 135F > rest 20 minutes; 150F > rest 20 minutes; 160F > rest 30 minutes. Add 1 tsp Irish Moss and boil 1 hour, following the hop schedule. Cool to 75F and rack to fermenter. Add WPL004; ferment 6 days @ 72F to 76F; transfer to secondary for 8 days. Keg at 12 lb. CO2 or Bottle with 7/8 cup Dextrose. Mmmmmm.....

F.G. 1.012 Turned out very nice. Medium hopped; great body.

I highly recommend WPL004 for this style of beer. We used it on this one, plus a black stout (Old #9) that will be served along side it on St. P's Day. I really like the steady fermentation and overall results 004 had on both batches. Will post subsequent comments after it's served. THX.
