Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

White Labs WLP051 California Ale V
From Northern California. This strain is more fruity than WLP001, and slightly more flocculant. Attenuation is lower, resulting in a fuller bodied beer than with WLP001.
Notes
Mash grains in 1.5 qts water heated to 165ºF. Sparge with 1 gallon 170º water. Also add 1/2 oz Cascade for 5 min and 1/2 oz each Cascade and Saaz dry hop. Add honey at flameout. I will use CA starthistle but orange blossom is also a good choice. This batch pitched onto yeast cake from previous brew.

dry hopped

Wound up dry hopping with 1/4 oz each cascade and saaz. I didn't rack to a secondary, just threw the extra hops into the primary after fermentation slowed down. Most the hops have already settled out, I'll leave it another week for the rest to do the same.

So far, not as good as the last iteration. The honey flavors of this one are much more present, but the wheaty/yeasty flavors are out of balance right now. The dry hopping worked well though, that was a good change.

This one took a bit of time for the honey flavors to really come into balance with the beer, but it was worth the wait. The super fresh hop aroma has died down a bit (more dry hops next time?), but the honey aroma is more pronounced. The flavors are crisp and clean hops and full, rounded honey. It will be great for hanging out in the yard this summer.

Got the scores back. This one rated 28.5. Not as good as I had hoped, but hey not bad for a first try. Lots of good comments to try in the future.
