Notes

Steep grains in water while heating, remove and rinse at 165ºF. Add 1 tsp gypsum and 1/4 tsp each table salt and epsom salt to brew pot. Add extract and water to 5 gallons or however much your pot holds. Boil for >2 hours, keeping the volume at least 3.75 gallons by adding boiling water if necessary. This will caramelize some of the sugars. Once you're down to 3.75 gal, or 2 hours have elapsed, whichever is later, start adding the hops. Add 1 oz Cascade for 60 min, 1 oz Fuggles 45 min, 1/2 oz each Cascade and Fuggles 15 min. Make a 2 qt starter the day before for best results. Pitch yeast when cooled. Stir once the day after pitching to get some extra oxygen in there. Primary ferment for 10-20 days. Secondary for ~2-3 months with 1/2 oz Saaz and 1/4 oz Tettnanger. Bottle with 0.9 oz corn sugar per gallon (2.7 oz if you package 3 gallons). Let bottle condition for at least 1 month, preferably 6.
