I just racked this beer to the secondary and tasted the gravity sample. I loved it. You can taste the alcohol so the beer will definately benefit from aging.

Ingredients (Extract5 gal)

  • .5 lbs British Crystal 55°L

    British Crystal 55°L

    Sweet caramel flavor, adds mouthfeel and head retention. For pale or amber ales.

  • .25 lbs British Black Patent

    British Black Patent

    Dry, burnt, chalky character. Use in porters, stouts, brown ales and dark lagers.

  • .25 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 6 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 1 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 2 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 2 oz Fuggle - 4.8 AA% whole; boiled 60 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • .5 oz East Kent Goldings - 5.0 AA% whole; boiled 10 min

    Mild, slightly flowery.

  • 3 tbsp All Spice - (omitted from calculations)

  • 4 tbsp Cinamon/Nutmeg - (omitted from calculations)

  • Wyeast 1098 British Ale™

    Wyeast 1098 British Ale™

    From Whitbread. Ferments dry and crisp, slightly tart, fruity and well-balanced. Ferments well down to 65F.

Notes

The Cinamon and Nutmeg come to 2 tbs each. Primary one week (or until the yeast cake drops), secondary two weeks and age in bottle three weeks.
