Interesting combination. Good beer, probably would be better with fruit not so tart to balance the Belgian yeast flavors better.

Ingredients (Extract5 gal)

  • 5 lbs Liquid Wheat Extract

    Liquid Wheat Extract

    Made with a preponderance of wheat malt (55%) for the production of wheat or Weiss beers. Contains no colored malts or hops.

  • 1 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1 lbs Wheat Flaked

    Wheat Flaked

    Belgian White Ale(wit), other specialty beers.

  • 1 oz Hallertau - 4.5 AA% pellets; boiled 45 min

    Hallertau

    Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

  • 2 lb blackberries - (omitted from calculations)

    Wyeast 3942 Belgian Wheat™

    Estery low phenol producing yeast from small Belgian brewery. Apple and plum like nose with dry finish.

Notes

Blackberries steeped at 160F for 15 minutes to sterilize. Beer racked onto blackberries for secondary fermentation.

A little too tart for my tastes. However, friends and family liked it, even some who don't normally drink beer.
