This is my favorite commercial DIPA, and one of the best batches of DIPA I’ve brewed. Thanks to Vinnie Cilurzo of Russian River Brewing for sharing his recipe with the homebrewing community.

Ingredients (All Grain10 gal)

  • 27 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 2 lbs Dextrine Malt

    Dextrine Malt

    In light-colored beers to give additional body. Adds richness without color.

  • 1 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 2.25 lbs Corn Sugar

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • 1 oz Chinook - 13.0 AA% pellets; boiled 90 min

    Chinook

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 5.5 oz Warrior® - 16.0 AA% pellets; boiled 90 min

    Warrior®

    New hop with much potential. Very stable.

  • 2 oz Simcoe® - 13.0 AA% pellets; boiled 45 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • 2 oz Columbus - 15.0 AA% pellets; boiled 30 min

    Columbus

    Used mainly for bittering with some flavor qualities as well. Aroma is pleasant.

  • 4.5 oz Centennial - 10.0 AA% pellets; boiled 1 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 2 oz Simcoe® - 13.0 AA% whole; boiled 1 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • 6.5 oz Columbus - 15.0 AA% pellets; added dry to secondary fermenter

    Columbus

    Used mainly for bittering with some flavor qualities as well. Aroma is pleasant.

  • 3.5 oz Centennial - 10.0 AA% pellets; added dry to secondary fermenter

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 3.5 oz Sterling - 13.0 AA% pellets; added dry to secondary fermenter

    Sterling

    Perceived to be similar to a Saaz and Mt. Hood combination. Finding favor as a Saaz replacement.

  • White Labs WLP001 California Ale

    White Labs WLP001 California Ale

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

This is my favorite commercial DIPA, and one of the best batches of DIPA I’ve brewed. Thanks to Vinnie Cilurzo of Russian River Brewing for sharing his recipe with the homebrewing community IBU’s: 95-100 (despite the IBU calculator results) Note: Can substitute Crisp Maris Otter for the North American 2-row for a more noticeable malt character. The beer will also be a bit darker. However, the actual Pliny uses a North American 2-row, very little crystal, and is very pale. add 1.50 oz. Chinook 13.0% as Mash Hops Mash grains with Chinook Mash Hops at 150-152 for 60 min Boil 90 min. Pitch large starter (2L or more) of WLP001 CA ale yeast. Ferment at 68F for 1 week Transfer to secondary and add dryhops. Secondary at 68F. Wait two weeks. Keg or bottle.
