This is a new one I made from leftovers from a couple of previous brews. Aside from the color (I said "what the heck?" and added all the 120L I had left) it makes a good Scottish 80 shilling!

Ingredients (Partial Mash5 gal)

  • 2.2 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 0.4 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .9 lbs Crystal Malt 120°L

    Crystal Malt 120°L

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • 0.4 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 0.4 lbs Crystal Malt 90°L

    Crystal Malt 90°L

    Body and Richness. Distictive Nutty flavor and or sweet, smooth caramel flavor and a red to deep red color. For porters, old ales.

  • 3.2 lbs Dry Light; Muntons

    Used as the base for a wide variety of styles of beers, including lager, pale ales, bitters, and export bitters. Contains no colored malts.

  • 0 lbs Candi Sugar Amber

    Candi Sugar Amber

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • .4 lbs Wheat Flaked

    Belgian White Ale(wit), other specialty beers.

  • 1.0 oz Fuggle - 4.8 AA% pellets; boiled 60 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 0.49 oz East Kent Goldings - 5.0 AA% pellets; boiled 15 min

    East Kent Goldings

    Mild, slightly flowery.

  • 0.50 oz East Kent Goldings - 5.0 AA% pellets; boiled 1 min

    Mild, slightly flowery.

  • White Labs WLP005 British Ale

    White Labs WLP005 British Ale

    This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.

Notes

Steep grains 30 mins @150 degrees. Sparge out at 170 degrees. 60 minute boil. 1 oz Fuggles @ 60mins. .49 Goldings @ 15mins. 1 tsp Irish Moss @15mins. .5 oz Goldings @ 2.5 mins. 70 degree ferm for 1 day and then cool to 68 degrees for 3 more days. 2 day secondary.
