White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

Tettnanger - 4.0 AA% pellets; boiled 45 min

Mild, slightly spicy. 'Noble'.

Czech Saaz - 4.4 AA% pellets; boiled 10 min

White Labs WLP011 European Ale
Malty, Northern European-origin ale yeast. Low ester production, giving a clean profile. Little to no sulfur production. Low attenuation helps to contribute to the malty character. Good for Alt, Kolsch, malty English ales, and fruit beers.

Bottled over the weekend. FG = 1.009. The aroma was very honey and fruit, but it didn't taste like much. Hopefully carbonation will help. I primed with 3/4 oz corn sugar (yield was slightly less than a gallon). Very fun orangy color from the persimmons. Cleared most of the way as well.
Better than I expected

This brew came out pretty well, much better than I had hoped. Appearance: Golden amber color, clear as a bell. Aroma: honey is dominant, with persimmons in the background and a hint of hops. Flavor: buckwheat honey flavor is prominent and very yummy. Persimmons and malt make their appearance in the middle. The finish is light, slightly citrusy, and a little yeasty. Overall: Honey is showcased well, with nice appearances from the persimmons and the malt. The hops are barely there but it's not lacking in hoppiness.

Well, heck, this is darn good. I'm sad I didn't make more than a gallon, and I think I'll put this on the slate for next fall when the persimmons come back into season. The fruit flavors have come out much more after some time in the bottle, and the malt has faded away a little. To that end I might add some more malt and possibly switch to a British ale yeast. Or not, we'll see.
Time to make this again

It's that time of year, so I'm making another batch of this beer. This time it's 3 gallons, so I just multiplied everything by 3 and we'll see how it turns out. Fermentation is nearly over now and I should be bottling in a week or two.
