My Neighbor Cocoa-ro Chocolate Stout

This was the third in our series of anime-themed brews. We used a partial mash procedure and aged this one for 3 weeks in a secondary and 2 months in the bottle. It might not need that much time, but getting a brewing group of almost 15 people together for a first taste is tough!

Ingredients (Extract5 gal)

  • 0.5 lbs Belgian Chocolate Malt

    Adds a nutty flavor, Brown Ales

  • 0.5 lbs Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 0.5 lbs Black Roasted Barley

    Black Roasted Barley

    Unmalted roasted grain, it is the backbone of many stouts. Imparts a sharp acrid flavor characteristic of dry stouts. Gives "dryness" to a stout or porter ,more so than regular Roasted Barley.

  • 5 lbs Dark; John Bull

    Dark; John Bull

    Colored using roasted malt to give a rich mocha flavor and aroma bringing individuality to mild, porter, and stout brews.

  • 5 lbs Amber; John Bull

  • 0.5 lbs Dark Brown Sugar

    Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

  • 0.25 lbs Malto Dextrin

    Adds body and mouthfeel. For all extract beers. Does not ferment.

  • 0.5 lbs Lactose

    Adds sweetness and body. Use in sweet or milk stouts.

  • 3 oz Fuggle - 4.8 AA% pellets; boiled 60 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 1 oz Saaz - 5.0 AA% pellets; boiled 5 min

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • 0.5 lb Chocolate (bittersweet bakers) - dark, non-dairy chocolate (omitted from calculations)

    Chocolate liquor to which sweeteners and cocoa butter have been added. Also known as dark chocolate. According to government standards, it must contain at least 35 percent chocolate liquor. Its fat content averages 27 percent. Tastes rich and smooth. Strongest chocolate flavor with minimal dairy or milk flavor. Flavor depends on cocoa bean blend rather than dairy ingredients.

The process takes up to six months.

Deep, rich and velvety. Soft chocolate flavors up front with intensify with aging. Brown head. Nice citrus hoppiness at end.
