Belgian Blond Ale • Partial Mash • 2.5 gal

Going for a classic Belgian blonde. I used a late extract method where I add the candi sugar and about half of the dme towards the end of the boil, about 20 minutes. This should keep the color lighter.

Ingredients (Partial Mash2.5 gal)

  • .25 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • 1.00 lbs German 2-row Pils

    German 2-row Pils

  • 2.0 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 1.0 lbs Candi Sugar Clear

    Candi Sugar Clear

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • .4 oz Cluster - 7.0 AA% pellets; boiled 60 min

    Cluster

    Used for bittering and flavor qualities in light and dark American lagers. Aroma is very floral.

  • .2 oz Styrian Goldings - 6.0 AA% pellets; boiled 10 min

    Styrian Goldings

    Mild, pleasant.

  • .2 oz Styrian Goldings - 6.0 AA% pellets; boiled 2 min

  • Wyeast 1388 Belgian Strong Ale™

    Wyeast 1388 Belgian Strong Ale™

    Robust flavor yeast with moderate to high alcohol tolerance. Fruity nose and palate, dry, tart finish.

Notes

OG hit 1.063. FG was 1.01. Kept in primary for 11 days before bottling. Was very cloudy. It has cleared since then with the sediment on the bottom. In retrospect, secondary fermentation is a must. Awaiting taste test.

Has anyone brewed this? Thinking of using Belgian pils malt, and extra light dme instead.
