White Labs WLP005 British Ale
White Labs WLP005 British Ale
This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.
Notes
The grains were rinsed and removed when the water reached 165ºF. Spices: 1/4 tsp each allspice, cinnamon, sweet paprika, and fresh grated nutmeg. With cocoa powder, boiled 10 minutes. Also added 1/4 tsp nutmeg and a small pinch of cocoa at flameout. This batch was pitched onto the yeast cake of my last batch (ESB) and fermentation began immediately. OG = 1.050.

Bottled yesterday. FG = 1.015 The spice taste was at a good level, so far as I could tell. Mostly I could taste the cinnamon, which tasted a little woody. We'll see how it turns out when carbonated.
Dry Extract & Hops

This beer looks interesting. I have two quick questions: 1. I do not have access to dry extract. What would you reccommend I use of liquid extracts? 2. I am curious as to why you've chosen Saaz hops. I am tempted to add Fuggles, but I would really like to know your reasoning for the Saaz before I change the recipe any. Thanks for the recipe - I look forward to hearing more about how this turned out!
Nice, but needs more spice

This turned out well. It's a light porter with a hint of spices. I would prefer a bit more spice to make up for the lack of hops flavor. I will probably add 50% more spices next time and also add a pinch of flavor hops.

Liquid extract is fine. I used leftover dry in this recipe. I usually add 20% more liquid extract (that would mean 1 lb light and 3/4 lb dark). You could use all light or some light, some amber/dark. You should get enough color from the grains, though you can add more dark grain if you want to use all light extract. I chose Saaz because 1) I had it on hand and 2) it's not very bitter so it wouldn't overshadow the spices. Fuggles would also be a good choice.

Tried this one again for the holidays. Everything is perfect now, the spices are in balance with the hops and malt, the carbonation is good, it is super. I might add a touch more cocoa at flameout, but that is all I would change at this point. Too bad there are only a few bottles left.
