Ingredients (Extract4 gal)

  • 0.41 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 0.41 lbs Crystal Malt 80°L

    Crystal Malt 80°L

    Body and Richness. Distictive Nutty flavor and or sweet, smooth caramel flavor and a red to deep red color. For porters, old ales.

  • 0.47 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 0.34 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 4.69 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 1.2 oz Cascade - 6.5 AA% pellets; boiled 60 min

    Spicy with citrus notes. Slightly grapefruity.

  • 0.4 oz Perle - 7.6 AA% pellets; boiled 15 min

    Perle

    Used mainly for its minty bittering and good green hop aromas in all non-pilsener lagersand wheats. Aroma is pleasant and slightly spicy

  • 0.375 oz Cascade - 6.5 AA% pellets; boiled 1 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 1 tbsp 1 whirlfloc tablet, boiled 15 mins - (omitted from calculations)

  • White Labs WLP005 British Ale

    White Labs WLP005 British Ale

    This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.

Notes

Grains went into cold water and the heat was turned on high. At 148 deg F, the heat was turned to very very low. 40 minutes later, the temp was 160 deg and the grains were removed and rinsed with 140 deg water. The pot was uncovered and the heat was back on high. The malt was added while heating. When the boil was rolling, hops were added as noted with an additional 1/8 oz Perle for 1 min. OG=1.058, as predicted (a first for me, hooray!)

Moved into the secondary today. SG= 1.018. The taste is sweet but with a good hop balance. The color is browner than I wanted it to be. It has a red tinge, but it's generally brown. Maybe I'll replace the crystal 80 with 40 next time.

Bottled today with 3/5 cup of corn sugar. FG = 1.018. Tastes pretty good and is redder now that it is clear. I still would cut down on the darker malts though.

Well, I had some problems with my capper, it seems. It was the first time I used it (new bench capper), and a few caps went on a little crooked. So the first few bottles weren't fully carbonated due to a bad seal. Oops. Anyway, it turned out pretty good. Way way too dark, but nice and hoppy. The bitterness is prevalent but well balanced. The hop flavor is pronounced but supported by some residual maltiness. Pretty good.
