(Almost) Steam Beer

California Common Beer • Partial Mash • 5 gal

This is closer to an American Pale Ale than a true Steam Beer, but I love the perfomance of this yeast. Coupled with a little bit of rye the flavor is noticeable, but not overbearing. Just leave out the dry hopping if you are looking for a more traditional steam beer. Not sure why the recipe calculator predicted so much color, the results are dead on Steam Beer color.

  • 3 lbs Maris Otter Pale

  • .75 lbs Dextrine Malt

    Dextrine Malt

    In light-colored beers to give additional body. Adds richness without color.

  • 3 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 1.5 oz Cascade - 5.6 AA% pellets; boiled 60 min

This has turned out to be a really good beer- the Wyeast2112 has to be one of my favorite yeasts for a nuanced flavor.

Hi there! I am going to brew a Cal. Common this week adn bought some rye malt because I saw a short note on some forum somewhere about rye adding just a little "bite" to a steam beer. So my question is how did this recipe stand up after a while? Did the rye come through? Too much? Just right? Thanks jamiehawk@cox.net
