A lot like Sierra Nevada. Not as coarse...but does lack some body. A little minty in flavor but has strong aroma of Cascades. Just needed a quick recipe to fill the keg!

Ingredients (Extract5.25 gal)

  • .625 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 7 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 1 oz Styrian Goldings - 6.0 AA% pellets; boiled 60 min

    Mild, pleasant.

  • 0.875 oz Liberty - 4.6 AA% whole; boiled 30 min

    Liberty

    Used mainly for finishing German and American style ales and lagers. Aroma is mild and pleasant.

  • 1 oz Cascade - 5.5 AA% whole; boiled 30 min

    Spicy with citrus notes. Slightly grapefruity.

  • 2 tsp Gypsum - (omitted from calculations)

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

Steep crystal in 150 degree water (1/2 gallon) for 30 minutes. Sparge with 1 gallon at 160F. Boil for 1 hour. Muntons extra light liquid extract from bulk. Add 1/3 of each bittering hop at 60, 45, 30 minutes. Add 1/2 oz. of Cascade and 1/2 oz. of Czech saaz plugs at 15 and then again at 1 minute. Frerment at 68-74 F. Rack to secondary on day 4 and add 1 oz. cascade dry hops. Keg with 4 oz. corn sugar. Cask condition for 2 weeks. Dispense with hand pump and cask breather at 1 psi.
