This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.
Notes
Best bet is to use a 2L yeast starter. I do 7 days in primary and at least 14 in secondary, you'd be suprised how long it slow ferments after the initial craziness. Bottle for at least 2 months before even sampling.. as with all "wines", it gets better with age. It will also take a while to carbonate as the yeast are "tired". Start with 1 tbsp. vanilla added to secondary, then add more at bottling if desired. The idea is to just get a hint of vanilla flavor/aroma.. you don't want to be able to really "taste" it.

Great after 2 years of bottle aging

...although I am shaering this one with friends and family as fast as I can. Wonder what 3 years will produce. Think I will do that, and save another big bottle for the 5 year aniversary !
