White Labs WLP005 British Ale
White Labs WLP005 British Ale
This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.
Notes
I used Wild Mountain Brand honey. Nice floral aroma without too flowery a taste. Good deep amber color. Primed with corn sugar.

nice beer

It's been in the bottle for about three months now. The carbonation is good and the flavor is excellent. A little light on the hop flavor, I would add a tad bit more next time. The honey is a nice subtle touch. A solid would-brew-again beer.
a little overcarbonated now

The carbonation has gotten to be a little aggressive and is lending too much bite to the beer. Maybe it wasn't done fermenting when I bottled it? (I didn't check the gravity of this beer.) It's not so carbonated that it gushes out of the bottle, but you can taste the extra acid and it bubbles excessively on the tongue.
