Matthew Jolly

This recipe is a pretty good clone of the original. It is probably one of my favourite recipes and beers. Well worth a go!

Ingredients (All Grain45 L)

  • 9.45 kg Maris Otter Pale

    Maris Otter Pale

An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1.8 kg British Crystal 55°L

    British Crystal 55°L

Sweet caramel flavor, adds mouthfeel and head retention. For pale or amber ales.

  • 0.39 kg English Chocolate Malt

    English Chocolate Malt

Dark malt that gives a rich red or brown color and nutty flavor. Use for: Brown ales, porters, some stouts Maintains some malty flavor, not as dark as roasted malt.

  • 0.14 kg British Black Patent

    British Black Patent

Dry, burnt, chalky character. Use in porters, stouts, brown ales and dark lagers.

  • 93 g First Gold - 7.5 AA% whole; boiled 90 min

    First Gold

First commercial dwarf hop designed for aroma consideration in England, a very promising hop.

  • 67.5 g Cascade - 5.5 AA% whole; boiled 0 min

Spicy with citrus notes. Slightly grapefruity.

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Great flavoured porter - not far off the original

This came out really well - my friend could not get enough of it. It had a rich full flavour and a good hop presence, well worth making again.
