This is the Handyman's Thirst Quecher. It's a Cream Ale maxed out at 5.6% ABV. The friend for whom I brewed I likes it a lot.

Ingredients (Partial Mash5 gal)

  • 1 lbs American 6-row Pale

    American 6-row Pale

    Tends to increase lautering efficiency due to a stiffer husk. May be used as the base malt for any beer style. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts.

  • 4 lbs Dry Extra Light Extract

    Dry Extra Light Extract

    For making very pale ales and lagers.

  • 1 lbs Rice Syrup

    Rice Syrup

    Rice syrup has no flavor impact in beer. Rich in fermentable sugar, light in color and body with crisp, dry taste.

  • 1 lbs Corn Flaked (Maize)

    Corn Flaked (Maize)

    Generally a neutral flavor, used to reduce maltiness of beer. Produces beer with a milder, less malty flavor. Uses: Primarily for light Bohemian and Pilsner lagers.

  • .5 oz East Kent Goldings - 5.0 AA% pellets; boiled 60 min

    Mild, slightly flowery.

  • .5 oz Liberty - 4.0 AA% pellets; boiled 15 min

    Used mainly for finishing German and American style ales and lagers. Aroma is mild and pleasant.

  • Danstar Nottingham

    Danstar Nottingham

    The Nottingham strain was selected for its highly flocculant & relatively full attenuation properties. It produces low concentrations of fruity and estery aromas and has been described as neutral for ale yeast, allowing the full natural flavor of malt & hops to develop. The recommended fermentation temperature range of this strain is 14° to 21°C (57° to 70°F) with good tolerance to low fermentation temperatures (12°C/54°F) that allow this strain to be used in lager-style beer. With a relatively high alcohol tolerance, Nottingham is a great choice for creation of higher-alcohol specialty beers!

Notes

Brewed for a friend who drinks American Swill. He liked it. The 6-row and Flaked Corn are steeped at 155F for 1 hr, taken off heat, sparged through grain bag, extract and syrup are stirred in thoroughly, and boiled for 60 minutes. I kegged and force carbonated.
