Derek

The best of the UK and USA? American hops, British yeast, and a mix of malts. Light on the alcohol, heavy on the hops.

Ingredients (Partial Mash18.5 L)

  • 2.25 kg American 2-row

    American 2-row

Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • White Labs WLP005 British Ale

    White Labs WLP005 British Ale

This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.

Notes

The first hops (45 min) were actually amarillo. With my hop utilization, I estimate just over 50 IBUs. This yeast gave up on a chocolate stout that I made, but the cake just kept attenuating this one! Next up was a barley wine... and the yeast is giving up on it. This British Ale yeast seems a little tempermental... I don't recommend it. Final product is quite good. Not as bitter as expected, but an easy drinking IPA.
