Ingredients (Extract5 gal)

  • .5 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .5 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • .25 lbs Belgian Caramunich

    Belgian Caramunich

    Caramel, full flavor, copper color. For Belgian ales, German smoked and bocks.

  • 7 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 2 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1 oz Brambling Cross - 6.0 AA% pellets; boiled 60 min

    Grandparent of Saxon and Viking, they have a unique toasty, buttery, slighly resiny aroma with some woody notes.

  • 1 oz Saaz - 5.0 AA% pellets; boiled 15 min

    Saaz

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • 1 oz licorice - (omitted from calculations)

    White Labs WLP011 European Ale

    Malty, Northern European-origin ale yeast. Low ester production, giving a clean profile. Little to no sulfur production. Low attenuation helps to contribute to the malty character. Good for Alt, Kolsch, malty English ales, and fruit beers.

Finally ready

When I first cracked one open, the licorice flavor seemed a bit strong... but after letting them sit for a month, it has mellowed out quite a bit & tastes excellent. This seems to be one of those few beers that taste better ice cold.
