Ingredients (Extract5 gal)

  • .50 lbs Belgian Biscuit

    Belgian Biscuit

    Warm baked biscuit flavor and aroma. Increases body. Use in Belgian beers.

  • .25 lbs Belgian Special B

    Belgian Special B

  • 9 lbs Liquid Wheat Extract

    Liquid Wheat Extract

    Made with a preponderance of wheat malt (55%) for the production of wheat or Weiss beers. Contains no colored malts or hops.

  • 3 lbs Liquid Dark Extract

    Liquid Dark Extract

    Used predominantly in the production of dark beers such as milds, browns, porters, and stouts.

  • 1 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • .25 lbs Torrified Wheat

    Torrified Wheat

    Helps head retention and mouthfeel, used in some pale ales.

  • 1 oz Tettnanger - 4.5 AA% whole; boiled 60 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • 1 oz Saaz - 5.0 AA% whole; boiled 15 min

    Saaz

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • .50 oz Perle - 8.2 AA% whole; boiled 1 min

    Perle

    Used mainly for its minty bittering and good green hop aromas in all non-pilsener lagersand wheats. Aroma is pleasant and slightly spicy

  • 3 oz Elderberries - (omitted from calculations)

  • White Labs WLP500 Trappist Ale

    White Labs WLP500 Trappist Ale

    From one of the six Trappist breweries remaining in the world, this yeast produces the distinctive fruitiness and plum characteristics. Excellent yeast for high gravity beers, Belgian ales, dubbels and trippels.

Notes

The Saaz & Perle hops used in this batch, I let go stale on perpose. For some strange reason, it took about a week for the yeast to get going. This turned out to be a very strange but delicious tasting beer.

I got it down to 1.005 so it's a bit stronger.
