Ingredients (Extract5 gal)

  • 1 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 6.6 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 1 lbs Dry Light; Muntons

    Dry Light; Muntons

    Used as the base for a wide variety of styles of beers, including lager, pale ales, bitters, and export bitters. Contains no colored malts.

  • 1 oz Chinook - 13.0 AA% whole; boiled 90 min

    Chinook

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 2 oz Willamette - 5.0 AA% whole; boiled 30 min

    Willamette

    This hop is used for finishing and dry hopping American and British style ales. Aroma is mild and pleasant ans slightly spicy

  • 2 oz East Kent Goldings - 5.0 AA% whole; boiled 15 min

    East Kent Goldings

    Mild, slightly flowery.

  • 1 oz Northern Brewer - 8.0 AA% whole; boiled 7 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 1 oz Fuggle - 4.8 AA% whole; boiled 1 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • White Labs WLP005 British Ale

    White Labs WLP005 British Ale

    This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.

Notes

Hopping was complex. Bitter with the Chinook for 90mins. Mix the rest of your hops, reserve ~1.5-2oz for dry hopping. Add the rest in handfulls occasionally for the last 30 minutes of the boil, with the last handful going in at flameout. Dryhop with the remaining hops for 2 weeks in secondary. This is a superb hoppy beer, and aged fairly well. I finished it off in about 6 months, and it was still quite tasty, although the profile was obviously changing as the hops aged. Turned more bitter, less hoppy, as time went by.
