Ingredients (Partial Mash10 gal)

  • 7.0 lbs German 2-row Pils

    German 2-row Pils

  • 1.0 lbs German Vienna

    German Vienna

    Increases malty flavor, provides balance. Use in Vienna, Märzen and Oktoberfest.

  • 1.0 lbs German Light Munich

    German Light Munich

    For a desired malty, nutty flavor. Lagers, Oktoberfests and bock beer.

  • 5.8 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 1.0 lbs Dry Wheat; Muntons

    Dry Wheat; Muntons

    Made with a preponderance of wheat malt (55%) for the production of wheat or Weiss beers. Contains no colored malts or hops.

  • 2.0 oz Tettnanger - 4.5 AA% pellets; boiled 60 min

  • 1.0 oz Saaz - 3.0 AA% pellets; boiled 30 min

Notes

This is a true to style Kolsch that is really enjoyable, Mikey. 'German Light Munich' malt is "Cara-Hell" malt. Liquid light malt is "Briess Pilsen Light" malt extract. Use soft (RO) water. Mash details; Use 9 qts of 130F water for the 9 lbs malt to achieve a mash @ 122F for 30Min, raise to 145-149 F for 90 Min with 1 Gal boiling water, sparge with 4.5 Gal @ 170F water. 60 Min boil. Ferment with Kolsch yeast for 4 days @ 60F, Secondary with dry Lager yeast @ 50F for 2 wks, cold condition @ 35F for 4 wks.
