Just got the ingredients today and will be brewing this weekend. I wanted Extra Light DME but the local shop only had Light DME, so the color is going to be a bit darker than I'd like, but we'll see how it turns out. I'll update upon transfer to secondary.

Notes
Steep Dextrin Malt & Flaked Wheat in 3 gal. water @ 150F for 30 minutes. Sparge with 1 gal. water @ 150F. Bring brewpot volume to 5.5 gal., bring to boil and add DME. Zest of 2 lemons added into secondary prior to transfer from primary.

Too lemony!

I entered the beer in a local brewpub's homebrew contest, and well, let's just say the comments included "not quite furniture polish lemony, but close" and "lemon overpowers any other flavors present". I never thought the zest from 2 small lemons could pack so much of a punch! Folks who have tried the beer enjoy it, at least noone has expressed displeasure with it. It's a light, thirst quenching drink, that's for certain. Next go round, I'll use half or maybe a quarter of the lemon zest and see what happens. I think I also want to increase the wheat taste just a bit.
