1. Grains in 150-160 1.5 gallons. 2. Rinse grains with same temp. 1 gallon. 3. Start timing at vigorous boil. 4. Cool to 75F before aerating and pitching. 5. Rack to secondary when appropriate. Actual ingredients used 11-08-04: 3.3 # Muntons Extra Light LME, 3.3 # Muntons Dark LME; 1 # Muntons Light DME; 5.75 oz Muntons Dark DME; 10 oz dark brown sugar; 10 oz American Crystal 80L; 5.3 oz Breiss chocolate malt. HOPS (all pellets): First, 1.5 oz Cascade and 1.5 oz Northern Brewer; Flavoring 1 oz Cascade; finishing, 1 oz Kent Golding and 1 oz Williamette.
