    Dark malted wheat base for use in dark wheat styles such as Dunkleweizen.

  • .5 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 2.0 lbs Dry Dark; Muntons

    Dry Dark; Muntons

    Used predominantly in the production of dark beers such as milds, browns, porters, and stouts.

  • 6.0 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 1.0 oz Northern Brewer - 7.1 AA% pellets; boiled 60 min

Notes

California ale yeast would be ideal, but I wanted to use up two packets of dry yeast that I had been saving. Add spices at the end of the boil.

Ironic that one of the only two categories that it conforms as an American is bitterness, and it's way at the top of the range. All kidding aside, interesting use of vanilla, pepper and Special B (one of my favorite malts). How'd it turn out? - Juarez

I wasn't able to detect the vanilla - probably didn't use enough or maybe it was masked by the maltiness - no harm, no foul I guess. I got the black pepper idea from the book Radical Brewing, and I think it gave a nice and gentle bite to the finish. Overall the beer was one of my best yet, and between me and my friends, it only lasted a week!
