A quick copper ale that I kegged for a party. Partygoers thaght it should be called an American amber.

Ingredients (Partial Mash5.5 gal)

  • 8.5 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • .5 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 2 lbs Honey Malt

    Honey Malt

    Nutty honey flavor. For brown ales, Belgian wheats, bocks and many other styles.

  • .5 lbs Dry Extra Light; Muntons

    Dry Extra Light; Muntons

    Contains no colored malts or unmalted products; the light color of this product is achieved by using low processing temperatures and low-colored raw materials.

  • .5 oz Northern Brewer - 7.0 AA% whole; boiled 70 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • .5 oz Cascade - 5.5 AA% pellets; boiled 50 min

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Fuggle - 4.2 AA% whole; boiled 50 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • .75 oz Cascade dry hop - (omitted from calculations)

  • White Labs WLP011 European Ale

    White Labs WLP011 European Ale

    Malty, Northern European-origin ale yeast. Low ester production, giving a clean profile. Little to no sulfur production. Low attenuation helps to contribute to the malty character. Good for Alt, Kolsch, malty English ales, and fruit beers.

Notes

90 minute boil. Ferment at 65 degrees. Step mash: 105-10min, 122-15min, 152-60 min. Cascade 3/4 oz. boil for 15 min.
