Ingredients (Partial Mash6 gal)

  • 13 lbs Maris Otter Pale

    Maris Otter Pale

An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1 lbs Dry Light Extract

    Dry Light Extract

  • .3333 lbs Wheat Flaked

    Wheat Flaked

Belgian White Ale(wit), other specialty beers.

  • 1 oz Magnum - 14.5 AA% whole; boiled 90 min

    Magnum

Bred in 1980 at Germany’s Hüll Hop Research Center, this high-alpha variety is renowned for its exceptionally large, heavy cones. Hallertauer Magnum delivers excellent yields and, like many Hüll-developed hops, boasts a strong resistance to disease.

  • .5 oz Mt. Hood - 5.0 AA% whole; boiled 30 min

    Mt. Hood

Used mainly for aroma and flavor in American and German style ales and lagers. Aroma is mild, pleasant, light, and clean.

  • 1 tsp Irish Moss - (omitted from calculations)

    Irish Moss

  • 1.5 oz Shredded Ginseng - (omitted from calculations)

    Shredded Ginseng

  • Wyeast 1332 Northwest Ale™

    Wyeast 1332 Northwest Ale™

One of the classic ale strains from the Northwest U.S. Breweries. Produces a malty and mildly fruity ale with good depth and complexity.

Notes

Boil the ginseng in a gauze bag for the first 30 minutes. Probably dump the remainder of the Mt. Hood in for the dry hops as well (1 ounce left in a 2 ounce bag.)
