NNN's Cream Sauce II

Cream Ale • Extract • 5 gal

frognogonon

Revision to orignal recipe. Looking for a little less bitterness and additonal "cream" from the lactose.

This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

2nd attempt at Cream Ale....Steep grains at 150F for 40 minutes; remove and bring to a boil. Add 1/2 of the extra light extract (Coopers) and Rice syrup or Dried Rice Extract. Then add Lactose and remaining extract at the end of the boil. Add the vanilla extract when racking to the secondary fermenter. *** Update:Turned out great! Would recommedn this for a summer brew anytime! Light and golden in color, very mild bitterness and nice vanilla finish.
